Pear Liqueur
(Base Infusion)

What It Is
A stillroom infusion that captures the aroma and sweetness of pears in alcohol. It is a traditional winter preparation, turning ripe fruit into a golden, shelf‑stable cordial.

Flavor / Character
Smooth, warm and aromatic. The pear flavor becomes deeper and more honeyed as it infuses and the spirit softens around it.

Uses
Dessert drinks, glazes, cocktails, tincture bases or spooned over ice cream or poached fruit. It can also be used to fortify syrups or jams.

How to Make or Prepare
Slice 3–4 ripe pears and pack them into a clean jar. Cover with 750 ml brandy or vodka. Add ½–1 cup sugar or honey depending on desired sweetness. Seal the jar and store it in a cool, dark place for 2–4 weeks, shaking every few days. Taste periodically; when the flavor is full and round, strain through a fine sieve or cloth and bottle. Let it rest another week to settle.

Notes
Label with date; the flavor continues to evolve. Overripe pears can cloud the liqueur but won’t harm it.
