Pear Chutney

What It Is
A savory‑sweet preserve that bridges orchard fruit with pantry spices and vinegar. It sits firmly in the domestic craft tradition, where fruit becomes a condiment rather than a dessert.

How to Make or Prepare
Dice 3 pounds of pears and combine them in a pot with 1 cup chopped onion, 1 cup vinegar (pear, apple or white wine), 1 cup sugar, ½ cup raisins (optional), 1 teaspoon salt, and spices such as mustard seed, ginger, cinnamon, or chili. Bring to a simmer and cook over medium‑low heat for 45–60 minutes, stirring often, until thick and glossy. The mixture should mound on a spoon. Jar while hot and let it age at least a week; the flavors settle and deepen with time.

Notes
If it tastes too sharp at first, give it time. Chutney improves dramatically after resting.
