Pear Stock Syrup

What It Is A neutral, lightly floral syrup made from pear juice and sugar. It functions as the sweet backbone of the pear pantry, carrying the fruit’s character without spice or complexity. It is the base note for drinks, glazes and preserved fruit.

Flavor / Character Clean, honeyed and soft. The pear flavor is present but not insistent, making it easy to pair with herbs, citrus or spirits. It behaves like a quiet sweetener with orchard memory.

Uses Cocktails, mocktails, fruit preservation, pastry brushing, sorbet bases and any preparation that needs sweetness with a subtle fruit tone. It can replace simple syrup anywhere you want a gentler flavor.

How to Make or Prepare Combine 2 cups pear juice (fresh or strained from cooked pears) with 2 cups sugar in a saucepan. Heat over medium, stirring until the sugar dissolves. Bring to a bare simmer and cook for 5–10 minutes until slightly thickened and glossy. Strain through a fine sieve to remove any pulp. Cool completely and store in a clean bottle in the refrigerator for up to 2 weeks. For infused versions, add a split vanilla bean, a sprig of thyme or a strip of lemon peel during the simmer and strain out before bottling.

Notes Do not over‑reduce; it should remain pourable. Cloudiness usually comes from pulp and can be fixed with a second straining.
