HAZEL
HAZEL SUGAR
What It Is
A fragrant, lightly nut‑infused sugar made by combining roasted hazelnuts with granulated or brown sugar. It captures Hazel’s warm, woodland sweetness in a dry, shelf‑stable form that can be used in baking, drinks and finishing work. Hazel Sugar behaves like vanilla sugar or citrus sugar: a quiet aromatic enhancer that deepens flavor without adding moisture.
Flavor / Character
Soft, nutty, and gently sweet. The hazelnuts lend a warm, toasted aroma that infuses the sugar without overpowering it. Depending on the sugar used (white, light brown, or dark brown) the blend can lean bright and crystalline or deeper and caramel‑leaning. The texture remains granular, with tiny flecks of hazelnut that dissolve during cooking.
Uses
Sprinkled over oatmeal, porridge or yogurt; stirred into coffee, tea or hot chocolate; used to sweeten whipped cream; or folded into cake, cookie or muffin batter. It can be dusted over fruit, used as a finishing sugar for pastries or rubbed into butter for a quick hazelnut‑scented crumble. In Hazel’s culinary world, this sugar acts as the everyday sweetener that ties together the sweeter pantry preparations like praline, gianduja and hazelnut syrup.
How to Make or Prepare
To make Hazel Sugar at home, roast hazelnuts at 325°F (165°C) for 10 to 12 minutes until fragrant, then rub off most of the skins. Once cooled, pulse the nuts with sugar in a food processor until the nuts are very finely ground and the sugar is aromatic. For a more delicate version, bury whole roasted hazelnuts in a jar of sugar and let them infuse for several days, shaking occasionally. Store Hazel Sugar in an airtight jar in a cool cupboard; the aroma deepens over time.
Notes
The sugar you choose shapes the character: white sugar keeps the flavor bright and clean; light brown sugar adds warmth; dark brown sugar creates a deeper, almost caramelized profile. A pinch of salt enhances the nut aroma. If you want a more pronounced flavor, add a spoonful of praline to the sugar and blend until dry and sandy.
