HAZEL

HAZEL SUGARY SPICE

What It Is A warm, aromatic sugar blend infused with finely ground hazelnuts and gentle spices. Hazel Spice Sugar behaves like a woodland version of cinnamon sugar or chai sugar: fragrant, lightly sweet and versatile. It brings Hazel’s characteristic warmth into breakfast dishes, baked goods and drinks without overwhelming them. This blend sits between Hazel Sugar and Hazel Spice Blend: sweeter than the spice blend and more aromatic than the plain sugar.

Flavor / Character Nutty, warm and softly spiced. The hazelnuts add depth and a buttery sweetness; the sugar provides brightness and structure; and the spices (usually cinnamon, nutmeg, or cardamom) give the blend its aromatic lift. The texture is sandy and cohesive, with tiny flecks of hazelnut that dissolve during cooking or melt into warm dishes.

Uses Sprinkled over toast, oatmeal, porridge or yogurt; dusted onto muffins, pancakes, waffles or French toast; folded into cookie or cake batter; or used as a finishing sugar for pastries and roasted fruit. It can be stirred into coffee, tea or hot chocolate for a quick, fragrant sweetness. In Hazel’s culinary world, this blend is the everyday “comfort sugar.” It is less intense than praline, more aromatic than Hazel Sugar alone and suited to both breakfast and dessert.

How to Make or Prepare To make Hazel Spice Sugar at home, combine Hazel Sugar with a small amount of Hazel Spice Blend or with individual spices such as cinnamon, nutmeg or cardamom. Adjust the spice level depending on the season: more cinnamon in winter, more cardamom in spring. Store the blend in an airtight jar in a cool cupboard; shake before using, as the nut component may settle. The aroma deepens over time as the sugar absorbs the warmth of the spices and hazelnuts.

Notes The sugar you choose shapes the character: white sugar keeps the blend bright and crystalline; light brown sugar adds warmth; dark brown sugar creates a deeper, almost caramelized profile. A pinch of salt enhances the nut and spice aromas. For a more dramatic version, add a spoonful of praline and pulse until sandy and dry.
