HAZEL
HAZEL ROAST RUB
What It Is A warm, aromatic seasoning blend built around finely ground hazelnuts, herbs and spices, used to coat vegetables or meats before roasting. It behaves like a woodland version of a dry rub: nut‑forward, gently sweet and deeply fragrant. Hazel Roast Rub creates a golden, flavorful crust and brings Hazel’s characteristic warmth into savory cooking without relying on whole nuts.
Flavor / Character Nutty, earthy and herb‑rich. The hazelnuts provide a soft sweetness and a toasty base; the herbs add brightness; and the spices give depth. The texture is fine and cohesive, allowing it to cling well to vegetables or proteins. Depending on the herbs used (thyme, rosemary, sage, or a mix), the rub can lean bright, resinous or autumnal.
Uses Pressed onto chicken thighs, pork or firm fish before roasting; scattered over carrots, squash, potatoes or mushrooms; or used as a seasoning for roasted chickpeas or cauliflower. It can be mixed with olive oil to form a paste for rubbing under poultry skin or brushed onto vegetables before they go into the oven. A spoonful stirred into melted butter makes a quick finishing drizzle for roasted dishes.
How to Make or Prepare To make Hazel Roast Rub at home, combine finely ground roasted hazelnuts with dried herbs such as thyme, rosemary or sage. Add a pinch of salt and spices like smoked paprika, black pepper or garlic powder. The blend should be fine enough to cling but not powdery. Store in an airtight jar in a cool cupboard or the refrigerator to keep the hazelnut oils fresh. Before using, pat the rub onto the surface of the food so it adheres well; a light coating of oil helps it form a golden crust.
Notes The character of the rub shifts with the herbs: thyme and rosemary create a classic woodland profile; sage makes it more autumnal; smoked paprika adds depth and color. The hazelnuts mellow sharper spices and help the rub brown beautifully in the oven. Because the blend contains nuts, it benefits from cool storage and small batches.
