HAZEL

HAZEL POWDERED SUGAR

What It Is A fine, aromatic icing sugar infused with hazelnuts, used for dusting, glazing, frosting and delicate pastry work. Hazel Powdered Sugar is made by blending powdered sugar with a small amount of Hazel Flour or Hazel Meal until the mixture becomes silky, fragrant and pale nut‑flecked. It behaves like vanilla sugar in powdered form: light, sweet and designed to disappear into frostings, whipped creams and glazes while leaving behind a warm, woodland aroma.

Flavor / Character Soft, nutty and gently sweet. The hazelnuts lend a warm, toasted aroma that deepens the sugar without adding heaviness. The texture is ultra‑fine and airy, dissolving instantly into liquids and creams. The flavor is more delicate than Hazel Sugar, more refined than Hazel Spice Sugar and more neutral than praline. Depending on the nut grind used, the sugar can be perfectly smooth or carry the faintest whisper of texture.

Uses Whisked into glazes for cakes and pastries; folded into buttercream or whipped cream; dusted over pancakes, waffles or French toast; or used to finish brownies, tea cakes and cookies. It can be stirred into hot chocolate or coffee for a quick, fragrant sweetness or used to stabilize whipped cream with a subtle nut aroma. In Hazel’s culinary world, this sugar is the finishing veil: lighter than Hazel Sugar Crust, more refined than Hazel Spice Sugar and essential for delicate, airy preparations.

How to Make or Prepare To make Hazel Powdered Sugar at home, combine powdered sugar with a spoonful of Hazel Flour or very finely ground Hazel Meal. Pulse briefly in a food processor to integrate the nut evenly without warming it. For an ultra‑smooth version, sift the mixture through a fine mesh sieve. Store in an airtight jar in a cool cupboard; stir or shake before using, as the nut component may settle. Because powdered sugar absorbs moisture easily, keep the jar tightly sealed.

Notes The nut component should be extremely fine. Hazel Flour produces the smoothest result. A tiny pinch of salt enhances the aroma. If you want a spiced version, add a whisper of Hazel Spice Blend, though the base version is intentionally neutral. Because the mixture contains natural oils, it benefits from cool storage and small batches.
